7th Annual Northeast LA Concert & Fireworks with Cyn-Fully Delicious

Happy 4th!!!  

If you haven't made plans yet, stop by Eagle Rock's 7th Annual Northeast LA Concert & Fireworks, held on July 3, 2016.  Fun! Fireworks! Music! ,...and Vegan Food!  The event is free to the public with a moon bounce, community booths, food vendors and rock climbing.  Musical entertainment by The Spazmatics! 

Cyn-Fully Delicious will be selling their signature coral sushi roll combo plate.  Where Japanese tradition merges with tasty vegan flair.  Our coral roll starts with fresh veggies and our special blend of "white fish" and "lobster". We mix in a our cool-as-a cucumber roll to make a summertime hit.

We'll be serving up our signature coral sushi roll combo.  Traditional Japanese-style sushi with a twist.  Vegan "crab" & "white fish" with fresh veggies in a big ole roll.  Then our cool-as-a-cucumber roll completes the combo.  Grandma Kimura would give her seal-of-approval.  

In the mood for a good ole time fave... our sweet-tangy sloppy joes.  Wait a minute... this ain't mama's sloppy joes.  No way!  This is a sloppy joe on steroids.  Pow!!!

When snack-time rolls around, you'll be searchin' for some ooey-gooey goodness.  Yep!  Nachos vegan-style.  Make sure to kick it up with jalapenos.

Cyn-Fully Delicious at The Vegan Faire

Been craving some knock-out vegan food?  Check out the 2nd Annual Vegan Faire, coming to you on July 25th at the Center Street Promenade in Anaheim.  Music, food, fun!!!

The Pie Contest… Vegan French Silk with Coconut Whipped Cream

A few weeks ago, Craig was looking through our copy of the Santa Clarita Magazine.  The magazine in which Toby, our good-looking pup, got his picture chosen for staff pick in the cutest pet photo contest.  Just had to plug our little guy. 

Craig noticed that #CircleofHope, a cancer survivor’s organization, was having a pie contest.  Pie??? Now, I’m not much of a baker, but I couldn’t resist the opportunity to show the community that great tasting vegan pie does exist.   I decided to enter.



Choices, choices, choices…which pie to enter?  I wanted to choose a pie that you wouldn’t necessarily think of as vegan.  Got it! 

Vegan French Silk Pie 
I remember as a child, my family would stop at Baker’s Square and pick up a pie.  One of my all-time favorites was their French Silk Pie.  Chocolatey, smooth, creamy goodness topped with whipped cream and chocolate shavings.

I’ve never made a French silk pie, so I had to find out what ingredients are in it.  Here’s what I learned, traditional French silk pie is made with raw eggs… yuck!  Ree Drummond, the Pioneer Woman,  uses ingredients like baking chocolate, sugar, butter, vanilla extract, and the raw eggs. 


So, how am I supposed to get the texture minus the non-vegan ingredients?  Answer, Chocolate Covered Katie to the rescue!  She uses ingredients like silken tofu, chocolate chips, cocoa powder, vanilla extract … ingredients that are similar to The Grit’s Chocolate Vegan Death Cake’s Frosting.  I made the cake for Nick’s birthday ( the singer of Nightmare) the other week, so I knew the chocolate chips would probably give it a firm consistency.

I was right, Katie pretty much nailed it.  So, what could I change to make it my own?   It was time to experiment in the kitchen.  I grabbed my friend and my sous chef, Stacey.  Strong-brewed coffee, soy cream, canned coconut milk, almond extract, and Teeccino (the herbal, coffee alternative) seemed like good choices.   I chose a version and made a graham cracker crust (made with home-made graham crackers).

Now, I remember the Baker’s Square version was topped with whipped cream.  It was time to try my hand at coconut whipped cream.  Stacey and I watched a youtube video by Fablunch, and gave it a shot. 
I found out it was pretty easy to make.  But here’s the caveat.  You have to put the canned coconut milk in the fridge so the fat solidifies.  I had a few cans of Trader Joe’s cream coconut in the fridge.  I found that it has the most fat, which in turn makes more whipped cream. 
I topped the pie and made some chocolate, sea salt shavings.
Decadent, rich… a very adult dessert.

Pies, pies, pies... I was getting sick of French silk pies.  I made my last few for the contest and put them in the fridge overnight.  I thought I could just top them with the coconut whipped cream in the morning.  Wrong!
The day of the contest, I grabbed my coconut cream (the main ingredient in the whipped cream) and forgot to refrigerate the bowl.  It was totally hot and humid (not typical LA weather).  My whipped cream turned to soup.  Oh No!

Thankfully, I had more cans in the fridge and tried again with a cold metal bowl.  Yes, it worked.  Beautifully whipped peaks.  I topped one pie.  Now I needed more whipped cream for the other pies.  I grabbed another can of the Trader Joe’s coconut cream from the fridge and found it was liquid.  No solid white fat on the top.  The cans were identical on the outside, but the ingredients were not.  I salvaged the first, soupy batch, by putting it in the freezer and re-whipping.  I didn’t have much time left.  No chocolate, sea salt shavings.

Lesson of the day: all coconut milks are not the same.  The Trader Joe's coconut cream and the Chaokoh brand both list the first ingredient as coconut extract or extracted coconut.  Other brands that I bought list water or another ingredient.  In fact, one time the Trader Joe's coconut cream was great, the other time it didn't solidify.  What's goin' on???  I'll have to call the company.

Stacey and I grabbed the pies, hoping they weren’t going to melt in the heat for the car ride over.  (I put some ice packs in the containers to keep them cool and cranked up the a/c.)  Success.  No melted pies. 
The verdict.  I didn’t expect to win the contest.  I was merely looking to expose the public to a decadent vegan pie and do a little promo.  I did win, but not the contest. I had fun, got great feedback and made some new friends and connections.  Saw my friend and mentor Darmon McGruder from the Signal. Also, Cynthia and her group from Our Place Barbecue.  Overall a pretty great day!  I learned a lot and had a kick'n time... a winner.
So, if you want to try your hand at #VeganFrenchSilkPie , I'd start with Chocolate Covered Katie's recipe for your base and go from there.  The coconut whipped cream has only 3 ingredients and if you can get the goods to solidify, you've got it made.  Take a peek at the Fablunch video for a how to.

Taco Island - Will Be Rockin' Out at the SCV Music Festival


Craig was listening to KLOS, Jack FM, and the Sound last night and heard the promos for the SCV Music Festival .  This year Blue Oyster Cult & Aaron Tippin will be the headlining acts.  

Good News!  You can add Taco Island to that bill. We'll be there serving our signature vegan "chicken" street tacos with mojo sauce (aka Tacos Al Carbon with High Octane Mojo Sauce), vegan nachos, and Polar Explosions frozen drinks.

Taco Island at the Rhythm & Joy Festival

I'd like to invite all you locals to the Rhythm & Joy Festival on Saturday, August 30th from 11:00 am to 8:30 pm at the Warner Center Park, 5800 Topanga Canyon Blvd, Woodland Hills. Don't miss out, admission is free.

Animal Rights Conference & Homemade Vegan Dog Food

Craig and I are exhausted!  The three day Animal Rights Conference with X-Marks the Spot was fantastic.  It was a great opportunity to meet some dedicated animal rights activists and vegan foodies.  There was some yummy vegan chow from Southern Fried Vegan, Donut Friend, and Ishan’s Falafel. 

Thanks to everyone for stopping by the X-Marks the Spot booth and having some vegan street tacos (aka  tacos al carbon with mojo sauce).  We appreciate the positive feedback and love.  Sorry we didn’t get the vegan nachos out.  Shoot me an e-mail and I’ll send you the low-down on upcoming events as they’re scheduled.  Thanks to Jen Riley from FARM for making it all happen for us.  And thanks to all the activists for standing up for those who have no voice. We love you!

Homemade Vegan Dog Food

I’ve been feeding our pups, Toby and Suzie, homemade vegan dog food.  Wait!  Rewind… vegan dog food???  Aren’t dogs supposed to be carnivores?  You know you're going to kill your dogs!  After the current dog food recall from Proctor and Gamble ( Iams and Eukanuba), how can I feed my babies anything else? 

The first thing I had to was to research nutritional needs of dogs before I began.  So, I read “Vegetarian Cats and Dogs” by James Pedin.  (They’ve been doing this since the 80’s, so it’s no new fad.)  The book maps it out really thoroughly including recipes. And cats can go veg too.  

Toby especially loves the homemade vegan kibble.  He gives it two paws up!  Toby and Suzie’s coats are soft and shiny.  They have tons of energy.  And look happy and healthy.  No coincidence when I feed them food made from scratch. 

I use Pedin’s recipe with VegeDog & VegeYeast (Don't skimp on these, they're both necessary for nutritional value.).  Then I add my own enhancements – pumpkin and peanut butter.  Pumpkin for digestive health and peanut butter for flavor. 


Voile! There you have it.  Well, I do have to admit, it’s not that easy.  It does take some time to cut and bake.  I use a pizza cutter to cut.  If you have any better ideas, let me know.  Please… I’m dying for a faster procedure.  If you find it’s too time consuming, try mixing half store bought vegan kibble with homemade.  Overall, if you love your pups it’s worth it.  Food made with love, what could be better?

X-Marks the Spot at the Animal Rights Conference




X-Marks the Spot will be serving up vegan street tacos (aka tacos al carbon with mojo sauce) and nachos at the Los Angeles Animal Rights Conference at the Westin Hotel.  Don't miss the opportunity to eat some yummy vegan food and hear fabulous speakers like Gene Baur of Farm Sanctuary, Ingrid Newkirk of PETA, Chris DeRose of Last Chance for Animals, David Carter - NFL tackle for the Oakland Raiders, Nathan Runkle of Mercy for Animals, and the list goes on and on.  Besides these fantastic speakers, you can view screenings of "I Am An Animal", "Speciesism: The Movie", and "Cowspiracy the Sustainability Secret" with Q&A from some of the filmmakers. There's also a chance to participate in morning workouts sessions, networking receptions, awards banquet and reception, and exhibits.  This exciting event will be held from July 10th to July 13th.  Hope to see you there.

High Octane Car Show with X-Marks the Spot and Beyond Meat

If you’re in the Santa Clarita area this Saturday, stop by The High Octane Car Show.  I’ll be serving up my tacos al carbon using Beyond Meat’s “chicken strips”.  X-Marks the Spot will be teaming up with Beyond Meat for this event, so look for us at the Beyond Meat tent.  Stop by for a taste and say hello.  Proceeds for this event benefit The Gentle Barn, where inner city, at risk children have a chance to get in tune with rescued farm animals.  See over 200 cars, trucks, and motorcycles.  Live music.  Meet Rikki Rockett, Poison drummer, who’ll be there with his company Rockett Drum Works.  Also, see Buttercup the rescued cow and Buttercup, the car.  Fun event for all.  Hope to see you there.
